Sweet Potato Pie and Pecan Meringue Pie

FILLING

  • 2.5 cups pureed Sweet potato or two cups mashed (cooked and peeled)

  • 1 1/2 cup Coconut Cream

  • 1 Orange zest and juice

  • 4 Eggs

  • 2 Tbsp. Coconut Oil

  • 1 Tbsp. Vanilla

  • 2/3 to 3/4 cup Maple Syrup

  • 1 tsp Ground Ginger

  • 1 tsp Ground Cinnamon

  • ½ tsp Himalayan Salt

  • 1 Cup Toasted Pecans sprinkled across

CRUST

  • 1.5 cups Almond Meal

  • 1 Cup Coconut Flour

  • A little over 1/2 cup of tapioca flour. Between 1/2 c to 2/3 cup.

  • 1/4 tsp salt

  • 2 tsp cinnamon

  • 2 tsp baking powder

  • 6 Tbsp. Butter (cold)

  • 1 Egg

LEMON CHEESECAKE TOPPING

  • 250gm Silken Tofu

  • 1 tsp Lemon Juice + Whole Lemon Zest

  • ½ tsp Vanilla

  • ½ Cup Coconut Cream

  • 2 tbsp. Tapioca Flour

MERINGUE TOPPING

  • 4 Egg White (Room Temperature)

  • 1 ½ Tbsp. Honey

  1. Preheat oven to 180deg.

  2. Next combine in food processor take the Crust dry ingredients and pulse together to combine. Add the cold butter and pulse until roughly combined. Add the egg and pulse until combined, should ball here.

  3. Take a deep baking dish and butter the edges and pat out the crust in to a thin layer (roughly 5mm) cover base and edges. Cover with alfoil and bake at 180Deg for 20-25.

  4. Next combine your filling ingredients (accept the Pecans) and blend again until smooth. Transfer into a bowl.

  5. Place the filling into the crust and sprinkle with Pecan’s and place in the oven whilst you complete the next step

  6. Again in the food processor, add the cheesecake ingredients and blend till smooth. Remove the pie from the oven and pour the batter over the pecans.

  7. Cover in aluminium foil and bake for a further 50 mins.

  8. Once done allow to cool or if serving soon move on to the last step. The Meringue, in a clean dry electric mixing bowl add the egg whites and honey and set on low speed for 30 seconds. Then boost to high speed, till firm peaks form.

  9. Using piping bag or spoon place the meringue on the pie and use the grilling option to lightly toast the top and slice to serve. Stay with it or else it will burn.

  10. Sprinkle with grated toasted coconut and serve with what ever your heart desires!
