Super Healthy Meatballs

These are such a super awesome healthy meatball dish. You can use egg if you wish to or not! This can be replaced with a chia seed or flaxseed egg replacement combination. I love these because they are awesome way of hiding a multitude of vegetables thanks to a groovy food processor, the children and husband won't even know. You can then go ahead and make an amazing tomato sauce using the same theory grab a multitude of vegetables and process them down so finally that no one will really noticed want you to cook it down quite well having lots of herbs and spices are a great way of hiding the huge veggie facade. These are also really great as a lunch box filler on their own. You can make them larger in muffin dishes as a savoury muffin of which can then be sliced on a bun or in a salad you just can't lose with these bad boys........... or should I say goodies! Ingredients: 1 carrot One stalk of celery One small brown onions 3 mushrooms 2 tablespoons of fresh parsley chopped finely 1 tablespoon fresh mint choc finally Half a stalk of leek Half cup of cabbage Tablespoon tomato paste Tablespoon tamari Tbsp Worcestershire Teaspoon mixed herb 2 cloves garlic Salt and pepper 500g mince Half a cup almond meal Half a cup gluten free flour 1 cup coconut flour Two eggs Optional parmesan cheese Place all vegetables in food processor band Blitz quite fine. Remove to a large bowl and add your mince and flower compounds along with remaining ingredients full stop use your hands and go to town bringing the mixture together evenly. Roll into large marble sized balls placed on aluminium foil or baking paper and bake at 190° for 15 to 20 minutes until nicely browned.
