Zucchini and Lemon Loaf

This is such an awesome simple loaf. You can make so many variations, most of the recipes I now do are biotrend specific. So a lot of the client I have my pH 360 Collins and we worked through what the genetics active acquire so these recipes that I give you quite often are a tweak of common recipes!

I love this recipe as you can add or subtract any of the ingredients for another dish you just have to accept like most loaves that's some may be heavier than others depending on the ingredient.

2 cups Zucchini grated 2/3 cup Flax & Almond meal 2/3 cup coconut sugar 2/3 cup coconut milk powder

2/3 cup coconut flour 1tbls honey 1 tsp baking powder 1 tbls almond butter 2/3 cup almond meal 1 tsp vanilla essence

2 egg whites zest of 1 lemon and juice Take egg whites, vanilla, honey and coconut sugar with the lemon juice and zest in food processor. Process until they become aerated and fluffy.

Add in the remaining flours and process well.

Place batter in a 30 centimetre by 10 centimetre brownie loaf or a 6 centimetre by 20 centimetre deep bread tin lined with baking paper.

Sprinkle with slivers of almond & sunflower seeds.

Bake at 180° for 30 minutes depending on which tin you used poke the centre with a knife an insurer it comes out clean.

Now while I'm at it!

This week I have to admit I was in a rush totally forgot to put the seeds on top before baking. So in my realisation I decided I would trial a quick caramel seed topping! This was at the 10 minute of baking mark so a crust had already started to form on the cake. So you can definitely put this on the cake as you make the batter or shortly after you can add this to the par-baked mixture.

** Bonus Recipe**

1/4 cup sunflower seeds

1/4 cup slivered almonds

1/4 cup sesame seeds

1/4 cup pepitas

1/4 cup pistachios

1/2 can coconut cream

1 Tbls honey (you may need to warm these so they combine properly! Under stovetop in a small pot or in the microwave, depend on your values)

1/2 tsp cinnamon (optional)

Ok so I grabbed just two of these depending on what the clients profile wanted and what their restrictions were on their diet.

Simply mixed together with the coconut and honey and optional cinnamon and Paul on to the top of the cake and spread evenly bake for a further 20 to 25 minutes.

Once your knife comes out clean remove from the oven and allowed to stand for 5 minutes and set, then remove from baking paper and cool on a rack. I highly recommend trying a good slice at this point!

Fresh is always best! The nuts and seeds should be beautiful and glistening caramel and crunchy I can't guarantee you may not eat the whole loaf right now!

Now this kind of recipe just like my banana bread is very difficult to stick with the one recipe all the time it is so simple to mix around flours, take something out and add bits in. Your just slightly changing the density of the cake. So if you cannot have coconut you could always use a different nut flour.
