Ok so you would have seen it on master chef! How to single handedly crack eggs! It looks simple but sure takes practice. So get cracking!! It's a total case of you want to be firm yet gentle. If you hit it too hard you will annihilate the whole entire egg and have one hell of a mess if you don't hit it hard enough it will sit there and taunt you. Coaxing you into a fit of Rage over what a simple egg haha. See you really have to be quiet affirmative in handling your egg with authority. You will crack for me and crack right where I want you so that I can have you're wonderful goodness. Seems like some crazy self talk but these damn eggs demand some respect. I mean they have been protecting their golden inner goodness since they were created. Anyway that's enough with the woo woo. It really is about getting in some practice and gaining your confidence you are sure to get a few bits in the bottom but consider them to be remanence of your continuous efforts to get it right. Haha as for keeping the shell out, best take a little more care. Its hit and miss. You really can't predict it. You can choose to delve a fork in and painstaking fish around chasing the bits of shell between the voluptuous egg whites or delve your hand in resulting in all kinds of Yoki mess. Mind you they do say that eggs have extremely great benefits for the skin :-D I know many natural masks that contain egg whites and egg yolks (I would love to see your favs?) But generally I don't get too fast if I'm just making something basic with a lightly whisked egg, I will do my whisking and then allow the mixture to sit for a few minutes. Then carefully pour out my egg mixture and generally you will find that there is only a tiny bit of egg mixture left in the bottom of the bowl with all of the shell pieces you can also use a strainer or siv at this point as well!
