This has to be one of my absolute favourite vegetables! The diversity of this vegetable is extraordinary. Used in sweet and savoury dishes of all descriptions. But first you've got to prepare the Dumb Things and half the time you're too exhausted after getting them skins off and chopped to actually want to eat them! Please take your time when cutting pumpkins and ensure a good hand grip. Safety first, always cut your larger pieces down to smaller flat pieces for easier, safer and stable chopping surfaces. Now I have had many ask how the heck to get that horrible pumpkin skin peeling or yellowing dryness off of your hands. This is actually classed as a reaction. A few ways you can avoid this, depending what you're using it for are simply cut the pumpkin in half roast it and then scoop out the flesh. Alternatively if you are like me ( not too fussed and time poor), leave the skin on! It is actually quite tasty and good for you. Crunchy skins rock my world! It depends really how much for blind eye you can turn to things or how fussy you are .If you're blending the soup it should not matter if the skins are on and if you're roasting it you can simply use your knife to take the skin off as you eat it. Apart from wearing awkward gloves there really is no easy way to avoid this. I have also simply used a silver scourer to exfoliate the residue off of my skin. Groovy nutrition fact! Boost Vision A cup of cubed pumpkin contains almost twice the recommended daily intake of vitamin A, which promotes good vision, especially in dim light, according to the National Institutes of Health. Thanks dailyburn.com for that nugget! A few more groovy facts there too
